
Maybe I am sounding like your grandmother, but time seems to fly.
No, it’s not my birthday (February have already finished and we ate the cake a long time ago). I realized that last Sunday 21th March Tales of a Spoon turned one! Isn’t it incredible? One year! I know, I know: some of you are veteran bloggers and one year is nothing, you will say, so I do not impress you.
But I am impressed myself, because I never thought that what began as an experiment to make myself to practice English while I share some of my edible creations would last so long. But…here I am!

And I am not only talking in a figurative sense. Some people (i.e. my parents) thought that my veganism was just a teenager’s act of rebellion and that I would literally fade away. Now my mother can’t say a word because I gained more than ten kilos since then (not that I didn’t need it, but still…) and I am now as convinced (and happy) of my decision as the first day.
I don’t know how do you feel about blogging, but I love it. I won’t lie: maintaining a blog is not easy and very time consuming, but it is definitely worth it. At the beginning even the idea that somebody would like to read what I write sounded crazy (for example, at this moment you are reading this. Isn’t it incredible? Ok, maybe you just got lost and arrived by accident. But you’re still here!). Actually, I still feel very happy every time somebody leaves a comment or drops me an e-mail. You encourage me to don’t give up!

I consider myself lucky because I had been able to meet incredible and interesting people from all around the world; maybe only virtually, but I love travelling…so who knows!

So before I get too sentimental, I am leaving you with the banana bundt cake recipe I promised to you some time ago. Let’s consider it this blog’s birthday cake. Try it, and if you feel like doing it, blow out a candle and make a wish

Chocolate Banana Bundt Cake
This is a very easy to do cake. The instructions are simple (mix the dry and wet ingredients and bake for 45-60min) but the result is not proportional to the amount of work. You will finish it in two shakes, but be careful: it will disappear very quickly too! It is not extremely sweet, so if you like you cakes really sweet I would consider increasing the amount of sugar or frosting it. For me it was perfect, especially because I ate it with homemade pear jam and it would have been too sweet otherwise. I feel like I am not adding anything mine to the recipe because I haven’t changed anything (except for the wheat flour: I used white and not whole wheat), but it was perfect just as it was.
From: Madhuram’s Egless Cooking, Vegan Chocolate Banana Cake
Serves: one bund cake
2 cups wheat flour
1 + 1/3 cup sugar
2/3 cup cocoa powder
1 + 1/2 teaspoon baking soda
½ teaspoon salt
1/4 cup canola oil
1 + 1/2 cups hot water
1 teaspoon vanilla extract
1 cup bananas, mashed or pureed
Heat the oven on 180ºC. Meanwhile, mix the dry ingredients (flour, sugar, cocoa, baking soda and salt) in one bowl. Set aside.
Mix the wet ingredients in another, the banana-pure at the end.
Pour the batter in a greased (if needed) pan (I used a pound cake pan) and bake for 45-60 min. Let it cool before attempting to remove. You can frost it or not.
It should freeze well (I didn’t froze this cake, but other with a similar consistency and the result was satisfactory)










Wow, congrats! I think I said that already before, but never mind:-) I really agree with you about time flying, it may sounds a bit like grandmother (not mine though.. I have never heard any of them saying that- It’s only my mom sometimes. ) but I say it all the time too. Because it’s true. Anyway, I know what you mean about being impressed your blog is turning one year old. I am too. Well, of course not impressed because your blog turned – I never thought it wouldn’t – but because mine is one year old soon. And so is my camera too! About that I’m even more impressed;) I too love blogging, and it’s a great way to improve English. I love getting comments, and they make me keep on blogging too. And you know, I am really bad at not blogging. May sound a little strange, but I have tried to have a few breaks but then I always broke them. It’s because everytime I have a break (like right now..) I come up with tens of things to write about and have plenty of photos I would like to post. Okay, I am again rambling.. Congrats again! I’m off to go to Helsinki to airport and then to Ivalo to stay at my dad’s place for a while.. I promise to write an e-mail as soon as possible.. p.s. I too hope we will be able to talk as much if we meet someday! and even more I hope we will be able to meet:-)

I understand what you mean with having a lot of things to say when you want to take a break
This is why I began to write down all my ideas for possible posts (not the posts themselves). Sometimes you have the idea, but when you try to wrtie the words just refuse to flow, or you don’t have the time or want to stay away from the computer.
By the way, I think I should do the same. I have the feeling that I spend a way too much time in front of it, and it can’t be good for my health
Actually, I think it’s quite logical: how can you write about something if you spend all your time in front of a screen?
And don’t worry about the e-mail: answer it when you feel like doing it
